In addition to our Cabernet family varieties, Continuum Estate grows about an acre of olives with over 553 trees. The varieties we grow here on Sage Mountain are excellent for the production of extra virgin olive oil and include Frontaio, Redding, Sevillano, Picholine, Mission, and Pendolino. Since 2008, we have carefully hand-harvested and crushed these olives at a local press.
After crushing the olives are carefully pressed so that only the finest extra virgin olive oil is blended and bottled. The blend varies from year to year but typically is made up of half Italian, a third French and the remainder Spanish. Our estate oil is buttery and deliciously vibrant with floral notes and pretty green melon flavors.
